As an American, there was no way I was going to let 4th of July be any regular day here in Tofo. I’d been planning something for awhile, but a large group of volunteers arrived a few days prior, so everyone joined in. (Left to right) Makenzie, myself (Holly), Caroline, Emily, Steph, and Mike (bottom), All Out Africa volunteers from North America, celebrated US Independence Day with other Mozambique Marine Research volunteers by making American 4th of July dishes. My most prized dish was the apple pie. Everyone pitched in with local market shopping and cooking to bring together barbecue chicken, pizza, corn, veggie salad, fruit salad, pasta salad, and pie for desert. Our soundtrack for the night included great hits such as “American Pie” and “Sweet Home Alabama.” Overall it was a successful night and extremely memorable. It goes to show, there are very few ordinary days when in Africa!
